Ingredients:
- 1 lb lean ground beef
- 1 packet taco seasoning
- ½ cup water
- 6 medium flour tortillas
- 1 can refried beans
- 1 can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions:
- Preheat the oven to 375°F (190°C). Spray two baking sheets with non-stick spray and arrange 3 tortillas on each sheet.
- Bake tortillas for 3-5 minutes, flip, and bake for an additional 2-5 minutes until golden and crispy. Remove and set aside.
- In a skillet over medium-high heat, cook ground beef, crumbling it until browned. Drain excess grease.
- Add taco seasoning and water to the beef. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes. Set aside.
- Warm refried beans in a microwave. Spread a thin layer over one crispy tortilla. Top with ⅓ of the cooked meat, then cover with a second tortilla.
- On the top tortilla, spread 3 tablespoons of enchilada sauce. Sprinkle with cheddar and pepper-jack cheese, and add diced tomatoes, green onions, and black olives.
- Repeat assembly for remaining tortillas to make three pizzas. Place pizzas back in the oven and bake for 5 minutes until cheese is melted and bubbly.
- Allow to cool slightly. Slice into quarters and serve immediately.
