Ingredients:

  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions:

  1. Beat the softened butter and 1 1/2 cups of sugar on medium high. Mix for 3 minutes until the mixture looks pale and fluffy.
  2. Add eggs one at a time. Beat well after each egg, then stir in the vanilla extract until the batter is smooth.
  3. In a separate bowl, whisk the flour, cream of tartar, baking soda, and salt.
  4. Gradually add the flour mixture to the wet ingredients. Mix on low speed until the white streaks of flour disappear. Note: Overmixing makes the cookies tough.
  5. Combine the 1/4 cup sugar and cinnamon in a small bowl for the coating.
  6. Scoop rounded tablespoons of dough. Roll each ball in the cinnamon sugar mixture twice to ensure a thick crust. This is how you get those Trishas Snickerdoodles quick results.
  7. Place balls 2 inches apart on a parchment lined sheet.
  8. Bake at 350°F (175°C) for 8-10 minutes. Remove when the edges are set and the tops have cracked.
  9. Let the cookies cool on the pan for 5 minutes. The centers will look slightly underdone, but they firm up as they cool.
