Ingredients:
- 3/4 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
Instructions:
- Beat the softened butter and 1 1/2 cups of sugar on medium high. Mix for 3 minutes until the mixture looks pale and fluffy.
- Add eggs one at a time. Beat well after each egg, then stir in the vanilla extract until the batter is smooth.
- In a separate bowl, whisk the flour, cream of tartar, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients. Mix on low speed until the white streaks of flour disappear. Note: Overmixing makes the cookies tough.
- Combine the 1/4 cup sugar and cinnamon in a small bowl for the coating.
- Scoop rounded tablespoons of dough. Roll each ball in the cinnamon sugar mixture twice to ensure a thick crust. This is how you get those Trishas Snickerdoodles quick results.
- Place balls 2 inches apart on a parchment lined sheet.
- Bake at 350°F (175°C) for 8-10 minutes. Remove when the edges are set and the tops have cracked.
- Let the cookies cool on the pan for 5 minutes. The centers will look slightly underdone, but they firm up as they cool.
