Ingredients:

  • 2 cups full-fat Greek yogurt
  • 3 cloves garlic, finely minced
  • 1 cup English cucumber, grated
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Grate the cucumber using the coarse side of a box grater. Place the shreds in a sieve, sprinkle with a pinch of salt, and let sit for 5 minutes. Note: This starts the water extraction.
  2. Press firmly with your hands or a kitchen towel to expel all excess liquid from the cucumber. Squeeze until no more water drips.
  3. In a medium bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and olive oil for your Tzatziki Sauce until the mixture is smooth.
  4. Ensure the garlic is evenly distributed throughout the yogurt base.
  5. Fold in the squeezed cucumber, chopped dill, and mint.
  6. Season with salt and black pepper.
  7. Stir gently until the herbs are marbled throughout the base.
  8. Taste and add an extra squeeze of lemon if you want more zing.
