Ingredients:
- 2 cups full-fat Greek yogurt
- 3 cloves garlic, finely minced
- 1 cup English cucumber, grated
- 2 tbsp fresh dill, finely chopped
- 1 tbsp fresh mint, finely chopped
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Grate the cucumber using the coarse side of a box grater. Place the shreds in a sieve, sprinkle with a pinch of salt, and let sit for 5 minutes. Note: This starts the water extraction.
- Press firmly with your hands or a kitchen towel to expel all excess liquid from the cucumber. Squeeze until no more water drips.
- In a medium bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and olive oil for your Tzatziki Sauce until the mixture is smooth.
- Ensure the garlic is evenly distributed throughout the yogurt base.
- Fold in the squeezed cucumber, chopped dill, and mint.
- Season with salt and black pepper.
- Stir gently until the herbs are marbled throughout the base.
- Taste and add an extra squeeze of lemon if you want more zing.
