Ingredients:

  • 6-8 Vanilla Beans (Grade B or Extract Grade), split lengthwise
  • 1 cup (8 fluid ounces / 240 ml) Vodka (80 proof/40% ABV or higher), preferably unflavored

Instructions:

  1. Split the vanilla beans lengthwise using a sharp knife. Do NOT scrape out the seeds.
  2. Place the split vanilla beans into the sterilized jar or bottle.
  3. Pour the vodka over the vanilla beans, ensuring they are fully submerged.
  4. Seal the jar tightly with the lid.
  5. Store the jar in a cool, dark place for at least 2 months, shaking gently every week or two. The longer it sits, the stronger the flavour.
  6. After 2 months, taste a small amount. If desired, continue infusing for up to a year.
  7. After desired flavor is achieved, use the vanilla extract in your recipes. Optionally, strain the extract through a coffee filter or cheesecloth for a clearer extract. Keep the beans for making vanilla sugar!
