Ingredients:
- 6-8 Vanilla Beans (Grade B or Extract Grade), split lengthwise
- 1 cup (8 fluid ounces / 240 ml) Vodka (80 proof/40% ABV or higher), preferably unflavored
Instructions:
- Split the vanilla beans lengthwise using a sharp knife. Do NOT scrape out the seeds.
- Place the split vanilla beans into the sterilized jar or bottle.
- Pour the vodka over the vanilla beans, ensuring they are fully submerged.
- Seal the jar tightly with the lid.
- Store the jar in a cool, dark place for at least 2 months, shaking gently every week or two. The longer it sits, the stronger the flavour.
- After 2 months, taste a small amount. If desired, continue infusing for up to a year.
- After desired flavor is achieved, use the vanilla extract in your recipes. Optionally, strain the extract through a coffee filter or cheesecloth for a clearer extract. Keep the beans for making vanilla sugar!
