Instructions:
- Pat the salmon cubes thoroughly dry with paper towels. Season evenly with salt and pepper.
- Heat the olive oil in a large, heavy-bottomed skillet over medium-high heat until shimmering. Add the salmon cubes in a single layer (work in batches if necessary to avoid crowding the pan). Sear for 2–3 minutes per side until golden brown and cooked through (opaque throughout). Remove salmon from the pan and set aside on a clean plate.
- Reduce the heat to medium-low. Add the butter to the residual drippings in the skillet. Once melted, add the minced garlic. Sauté gently for about 30–60 seconds until fragrant.
- Whisk in the honey, soy sauce, and lemon juice. Bring the mixture to a gentle simmer, stirring constantly, until it thickens slightly (about 1 minute). It should coat the back of a spoon.
- Return the cooked salmon bites to the pan. Toss gently but quickly to ensure every piece is coated evenly in the sticky glaze. Cook for just 30 seconds to warm through.
- Transfer immediately to a serving dish. Garnish liberally with fresh chopped parsley or chives and serve hot.
