Ingredients:

  • 2 large sweet potatoes (approx. 1.5 lbs / 680g), peeled and sliced into 1/4-inch (6mm) thick rounds
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon honey (15ml)
  • 1 teaspoon smoked paprika (5ml)
  • 1/2 teaspoon garlic powder (2.5ml)
  • 1/4 teaspoon ground cinnamon (1.25ml)
  • Salt and freshly ground black pepper to taste
  • Optional: Fresh rosemary or thyme sprigs for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. Peel and slice the sweet potatoes into uniform 1/4-inch (6mm) thick rounds.
  3. In a large bowl, whisk together the olive oil, honey, smoked paprika, garlic powder, cinnamon, salt, and pepper.
  4. Add the sweet potato slices to the bowl and toss until evenly coated with the honey-spice mixture.
  5. Spread the sweet potato slices in a single layer on the prepared baking sheet, ensuring they aren't overlapping.
  6. Bake for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized around the edges.
  7. Garnish with fresh rosemary or thyme (if using) and serve immediately.
