Ingredients:
- 2 large sweet potatoes (approx. 1.5 lbs / 680g), peeled and sliced into 1/4-inch (6mm) thick rounds
- 2 tablespoons olive oil (30ml)
- 1 tablespoon honey (15ml)
- 1 teaspoon smoked paprika (5ml)
- 1/2 teaspoon garlic powder (2.5ml)
- 1/4 teaspoon ground cinnamon (1.25ml)
- Salt and freshly ground black pepper to taste
- Optional: Fresh rosemary or thyme sprigs for garnish
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- Peel and slice the sweet potatoes into uniform 1/4-inch (6mm) thick rounds.
- In a large bowl, whisk together the olive oil, honey, smoked paprika, garlic powder, cinnamon, salt, and pepper.
- Add the sweet potato slices to the bowl and toss until evenly coated with the honey-spice mixture.
- Spread the sweet potato slices in a single layer on the prepared baking sheet, ensuring they aren't overlapping.
- Bake for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized around the edges.
- Garnish with fresh rosemary or thyme (if using) and serve immediately.
