Ingredients:
- 1.5 lbs (680g) carrots, peeled and cut into 1-inch (2.5 cm) pieces
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) honey
- 1 tablespoon (15 ml) balsamic vinegar
- 1 tablespoon (15 ml) fresh thyme leaves, chopped (or 1 teaspoon dried thyme)
- 1/2 teaspoon (2.5 ml) salt
- 1/4 teaspoon (1.25 ml) black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Peel and chop the carrots into even-sized pieces.
- In a large bowl, whisk together olive oil, honey, balsamic vinegar, thyme, salt, and pepper.
- Add the carrots to the bowl and toss to coat evenly with the honey-thyme glaze.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper (if using). Roast for 25-30 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
- Remove from oven and serve immediately. Garnish with extra fresh thyme, if desired.
