Ingredients:

  • 1.5 lbs (680g) carrots, peeled and cut into 1-inch (2.5 cm) pieces
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) honey
  • 1 tablespoon (15 ml) balsamic vinegar
  • 1 tablespoon (15 ml) fresh thyme leaves, chopped (or 1 teaspoon dried thyme)
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) black pepper

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop the carrots into even-sized pieces.
  3. In a large bowl, whisk together olive oil, honey, balsamic vinegar, thyme, salt, and pepper.
  4. Add the carrots to the bowl and toss to coat evenly with the honey-thyme glaze.
  5. Spread the carrots in a single layer on a baking sheet lined with parchment paper (if using). Roast for 25-30 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
  6. Remove from oven and serve immediately. Garnish with extra fresh thyme, if desired.
