Ingredients:
- 1 pound (450g) carrots, peeled and sliced into 1/2-inch thick rounds
- 2 tablespoons (30ml) olive oil
- 1/4 teaspoon (1.5g) salt
- 1/4 teaspoon (0.5g) black pepper
- 2 tablespoons (30g) unsalted butter
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) water
- 1 teaspoon (5ml) fresh thyme leaves, finely chopped (or 1/2 teaspoon dried thyme)
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Toss carrot slices with olive oil, salt, and pepper in a mixing bowl.
- Spread carrots in a single layer on the baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- While the carrots are roasting, melt butter in a large skillet over medium heat.
- Stir in honey, water, thyme, and red pepper flakes (if using) into the melted butter. Bring to a simmer.
- Add the roasted carrots to the skillet with the glaze. Toss to coat evenly. Cook for 2-3 minutes, or until the glaze thickens slightly and clings to the carrots. Watch carefully to prevent burning!
- Serve the honey-glazed carrots hot immediately.
