Ingredients:

  • 1 pound (450g) carrots, peeled and sliced into 1/2-inch thick rounds
  • 2 tablespoons (30ml) olive oil
  • 1/4 teaspoon (1.5g) salt
  • 1/4 teaspoon (0.5g) black pepper
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) water
  • 1 teaspoon (5ml) fresh thyme leaves, finely chopped (or 1/2 teaspoon dried thyme)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Toss carrot slices with olive oil, salt, and pepper in a mixing bowl.
  2. Spread carrots in a single layer on the baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  3. While the carrots are roasting, melt butter in a large skillet over medium heat.
  4. Stir in honey, water, thyme, and red pepper flakes (if using) into the melted butter. Bring to a simmer.
  5. Add the roasted carrots to the skillet with the glaze. Toss to coat evenly. Cook for 2-3 minutes, or until the glaze thickens slightly and clings to the carrots. Watch carefully to prevent burning!
  6. Serve the honey-glazed carrots hot immediately.
