Ingredients:

  • 3 ripe bananas (about 400g)
  • 1/3 cup (80ml) melted unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup (125g) all-purpose flour (sifted)
  • Optional: 1 teaspoon ground cinnamon or nutmeg
  • 1/2 cup (85g) chopped walnuts or pecans
  • 1/2 cup (90g) chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Add sugar, beaten egg, and vanilla extract; mix until smooth.
  5. Sprinkle baking soda and salt over the mixture; combine gently.
  6. Fold in the all-purpose flour until just incorporated (do not overmix).
  7. If desired, fold in nuts or chocolate chips.
  8. Pour the batter into a greased loaf pan.
  9. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
