Ingredients:
- 3 ripe bananas (about 400g)
- 1/3 cup (80ml) melted unsalted butter
- 1/2 cup (100g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup (125g) all-purpose flour (sifted)
- Optional: 1 teaspoon ground cinnamon or nutmeg
- 1/2 cup (85g) chopped walnuts or pecans
- 1/2 cup (90g) chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Add sugar, beaten egg, and vanilla extract; mix until smooth.
- Sprinkle baking soda and salt over the mixture; combine gently.
- Fold in the all-purpose flour until just incorporated (do not overmix).
- If desired, fold in nuts or chocolate chips.
- Pour the batter into a greased loaf pan.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
