Ingredients:

  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)

Instructions:

  1. In a mixing bowl, combine lime juice, olive oil, chopped cilantro, garlic, cumin, paprika, salt, and pepper. Whisk until well blended.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken, ensuring it's well coated. Seal the bag or cover dish; refrigerate for at least 30 minutes or up to 2 hours for maximum flavour.
  3. Preheat grill pan or outdoor grill over medium-high heat. Remove chicken from marinade; let excess drip off. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C) and juices run clear.
  4. Let the chicken rest for 5 minutes before slicing. Garnish with extra cilantro and lime wedges.
