Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ teaspoon salt
- 1 tablespoon sugar
- 2-4 tablespoons cold water
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- 1 cup light corn syrup
- 4 large eggs
- ¼ cup unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 1 ½ cups pecan halves
- ½ teaspoon salt
Instructions:
- In a bowl, combine flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
- In a large bowl, whisk together brown sugar, granulated sugar, and salt. Stir in corn syrup, melted butter, and vanilla until smooth. Add eggs one at a time, whisking until fully incorporated. Gently fold in pecan halves.
- On a floured surface, roll the dough to fit the pie dish. Transfer the rolled dough to the dish and trim the edges.
- Pour the filling into the prepared crust. Optionally, arrange some pecan halves on top for decoration.
- Preheat the oven to 350°F (175°C). Bake for 50 minutes, or until the filling is set and the crust is golden brown. Let cool on a wire rack before slicing.
