Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 2-4 tablespoons cold water
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup light corn syrup
  • 4 large eggs
  • ¼ cup unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups pecan halves
  • ½ teaspoon salt

Instructions:

  1. In a bowl, combine flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
  2. In a large bowl, whisk together brown sugar, granulated sugar, and salt. Stir in corn syrup, melted butter, and vanilla until smooth. Add eggs one at a time, whisking until fully incorporated. Gently fold in pecan halves.
  3. On a floured surface, roll the dough to fit the pie dish. Transfer the rolled dough to the dish and trim the edges.
  4. Pour the filling into the prepared crust. Optionally, arrange some pecan halves on top for decoration.
  5. Preheat the oven to 350°F (175°C). Bake for 50 minutes, or until the filling is set and the crust is golden brown. Let cool on a wire rack before slicing.
