Ingredients:

  • 3 cups (450g) cooked short-grain Japanese rice, chilled overnight
  • 1 tbsp (15ml) neutral oil
  • 4 cloves (12g) garlic, finely minced
  • 2 tbsp (28g) unsalted butter
  • 1 tbsp (15ml) soy sauce
  • 1 tsp (5ml) toasted sesame oil
  • 1/2 tsp (3g) granulated sugar
  • 1 tbsp (1g) dried parsley or freshly chopped scallions
  • 1 tsp (5g) toasted sesame seeds

Instructions:

  1. Transfer the chilled rice to a bowl. Use your fingers or a fork to gently break up any large clumps. Note: This prevents white, unseasoned patches in the final rice.
  2. Heat the neutral oil in a wok over medium heat. Add the minced garlic and sauté for 1–2 minutes until the edges are mahogany colored.
  3. Increase heat to medium high and add the butter. Wait until the butter is foaming, then fold in the chilled rice.
  4. Stir fry vigorously for 3–5 minutes until the rice is slightly crispy and the grains dance in the pan.
  5. Drizzle the soy sauce and toasted sesame oil around the edges of the pan. Note: This lets the sauce sizzle and caramelize before it hits the rice.
  6. Fold the caramelized sauce into the rice quickly.
  7. Sprinkle in the granulated sugar and stir for another 30 seconds to let it melt.
  8. Remove from heat immediately.
  9. Fold in the dried parsley or scallions and toasted sesame seeds.
  10. Plate immediately while steaming.
