Ingredients:
- 1 cup (2 sticks) (227g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ teaspoon almond extract (optional)
- 3 cups (360g) all-purpose flour, plus more for dusting
- 1 teaspoon baking powder
- ½ teaspoon salt
- 8 ounces (227g) cream cheese, softened
- ½ cup (1 stick) (113g) unsalted butter, softened
- 3-4 cups (360-480g) powdered sugar, sifted
- 2-3 tablespoons milk or heavy cream
- 1 teaspoon pure vanilla extract
- Pinch of salt
- Assorted Christmas sprinkles
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper or foil, leaving an overhang on the sides.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.
- Beat in the eggs one at a time, then stir in the vanilla extract and almond extract (if using).
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Press the dough evenly into the prepared baking pan.
- For best results, chill the dough in the pan for 15 minutes. This prevents excessive spreading.
- Bake for 25-30 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bars cool completely in the pan before frosting.
- While the bars are cooling, make the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add the sifted powdered sugar, beating on low speed until combined. Add the milk or heavy cream, one tablespoon at a time, until you reach your desired consistency. Stir in the vanilla extract and salt.
- Frost the cooled bars with the cream cheese frosting.
- Sprinkle generously with Christmas sprinkles.
- Cut into 16 bars and serve.
