Ingredients:

  • 1 cup (2 sticks) (227g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon almond extract (optional)
  • 3 cups (360g) all-purpose flour, plus more for dusting
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 8 ounces (227g) cream cheese, softened
  • ½ cup (1 stick) (113g) unsalted butter, softened
  • 3-4 cups (360-480g) powdered sugar, sifted
  • 2-3 tablespoons milk or heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Assorted Christmas sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper or foil, leaving an overhang on the sides.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and almond extract (if using).
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Press the dough evenly into the prepared baking pan.
  7. For best results, chill the dough in the pan for 15 minutes. This prevents excessive spreading.
  8. Bake for 25-30 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the bars cool completely in the pan before frosting.
  10. While the bars are cooling, make the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  11. Gradually add the sifted powdered sugar, beating on low speed until combined. Add the milk or heavy cream, one tablespoon at a time, until you reach your desired consistency. Stir in the vanilla extract and salt.
  12. Frost the cooled bars with the cream cheese frosting.
  13. Sprinkle generously with Christmas sprinkles.
  14. Cut into 16 bars and serve.
