Ingredients:
- 1 1/2 cups (150g) graham cracker crumbs
- 1/3 cup (67g) granulated sugar
- 6 tablespoons (85g) unsalted butter, melted
- 1 (14 ounce / 397g) can sweetened condensed milk
- 1/2 cup (120ml) Key Lime juice, plus 1 teaspoon zest
- 4 large egg yolks
- 1 cup (240ml) heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Lime slices or zest, for garnish
Instructions:
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom and up the sides of the pie plate.
- Refrigerate the crust for at least 30 minutes to set.
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together sweetened condensed milk, key lime juice (and zest!), and egg yolks until smooth.
- Pour the filling into the chilled crust and bake for 20-25 minutes, or until the filling is just set but still has a slight wobble in the center.
- Let the pie cool completely on a wire rack, then chill in the refrigerator for at least 2 hours before serving.
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Top the chilled pie with whipped cream and garnish with lime slices or zest. Now you have a delicious key lime pie recipe!
