Ingredients:

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/3 cup (67g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 1 (14 ounce / 397g) can sweetened condensed milk
  • 1/2 cup (120ml) Key Lime juice, plus 1 teaspoon zest
  • 4 large egg yolks
  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Lime slices or zest, for garnish

Instructions:

  1. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom and up the sides of the pie plate.
  2. Refrigerate the crust for at least 30 minutes to set.
  3. Preheat oven to 350°F (175°C).
  4. In a large bowl, whisk together sweetened condensed milk, key lime juice (and zest!), and egg yolks until smooth.
  5. Pour the filling into the chilled crust and bake for 20-25 minutes, or until the filling is just set but still has a slight wobble in the center.
  6. Let the pie cool completely on a wire rack, then chill in the refrigerator for at least 2 hours before serving.
  7. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Top the chilled pie with whipped cream and garnish with lime slices or zest. Now you have a delicious key lime pie recipe!
