Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated erythritol
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1 cup (96g) super-fine almond flour
  • 1/4 tsp (1g) salt
  • 8 oz (225g) full-fat cream cheese, softened
  • 1/4 cup (50g) powdered sweetener
  • 1 large egg
  • 1/2 tsp (2ml) lemon juice

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and granulated erythritol until combined.
  3. Stir in 2 eggs and vanilla extract until the mixture becomes glossy.
  4. Fold in cocoa powder, almond flour, and salt. Stir just until no dry streaks remain, then spread the batter evenly into the prepared pan.
  5. In a separate bowl, beat softened cream cheese and powdered sweetener until smooth and airy.
  6. Mix in one egg and lemon juice until the mixture is pale and velvety.
  7. Dollop the cheesecake mixture in small spoonfuls across the top of the chocolate brownie batter.
  8. Use a toothpick or knife to drag the cream cheese through the chocolate batter in a figure-eight motion to create a swirl effect.
  9. Bake for 22–25 minutes until the edges are firm and set, but the center still has a slight jiggle.
