Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) granulated erythritol
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/3 cup (30g) unsweetened cocoa powder
- 1 cup (96g) super-fine almond flour
- 1/4 tsp (1g) salt
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (50g) powdered sweetener
- 1 large egg
- 1/2 tsp (2ml) lemon juice
Instructions:
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter and granulated erythritol until combined.
- Stir in 2 eggs and vanilla extract until the mixture becomes glossy.
- Fold in cocoa powder, almond flour, and salt. Stir just until no dry streaks remain, then spread the batter evenly into the prepared pan.
- In a separate bowl, beat softened cream cheese and powdered sweetener until smooth and airy.
- Mix in one egg and lemon juice until the mixture is pale and velvety.
- Dollop the cheesecake mixture in small spoonfuls across the top of the chocolate brownie batter.
- Use a toothpick or knife to drag the cream cheese through the chocolate batter in a figure-eight motion to create a swirl effect.
- Bake for 22–25 minutes until the edges are firm and set, but the center still has a slight jiggle.
