Ingredients:
- 4 cups (960ml) Heavy Cream
- ½ cup (100g) Erythritol-based sweetener (like Swerve or Lakanto Monkfruit Blend) - Granulated
- 4 tablespoons (28g) Unsalted Butter, cut into pieces
- 1/4 teaspoon (1g) Xanthan Gum (optional, for extra thickness)
- 1 teaspoon (5ml) Vanilla Extract
Instructions:
- In the saucepan, whisk together the heavy cream and sweetener.
- Stir in the butter pieces.
- Bring the mixture to a gentle simmer over medium-low heat.
- Continue to simmer, stirring frequently, until the mixture has reduced by about half and thickened to a consistency similar to traditional condensed milk. This will take approximately 30 minutes.
- If using xanthan gum, whisk it in very gradually towards the end of the cooking time to avoid clumping.
- Stir in the vanilla extract.
- Remove from heat and let cool completely. The mixture will thicken further as it cools. Transfer to a clean jar or airtight container and store in the refrigerator.
