Ingredients:

  • 4 cups (960ml) Heavy Cream
  • ½ cup (100g) Erythritol-based sweetener (like Swerve or Lakanto Monkfruit Blend) - Granulated
  • 4 tablespoons (28g) Unsalted Butter, cut into pieces
  • 1/4 teaspoon (1g) Xanthan Gum (optional, for extra thickness)
  • 1 teaspoon (5ml) Vanilla Extract

Instructions:

  1. In the saucepan, whisk together the heavy cream and sweetener.
  2. Stir in the butter pieces.
  3. Bring the mixture to a gentle simmer over medium-low heat.
  4. Continue to simmer, stirring frequently, until the mixture has reduced by about half and thickened to a consistency similar to traditional condensed milk. This will take approximately 30 minutes.
  5. If using xanthan gum, whisk it in very gradually towards the end of the cooking time to avoid clumping.
  6. Stir in the vanilla extract.
  7. Remove from heat and let cool completely. The mixture will thicken further as it cools. Transfer to a clean jar or airtight container and store in the refrigerator.
