Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, pounded to ½-inch thickness
- 2 large eggs, lightly beaten
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (25g) almond flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In one shallow dish, place the beaten eggs. In another dish, combine the Parmesan cheese, almond flour, garlic, Italian seasoning, garlic powder, salt, and pepper.
- Dip each chicken breast in the egg mixture, then dredge it thoroughly in the parmesan mixture, pressing gently to ensure even coating.
- Arrange the breaded chicken breasts on the prepared baking sheet. Drizzle the melted butter and olive oil evenly over the chicken.
- Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (74°C).
- Garnish with fresh parsley (if using) and serve immediately.
