Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, pounded to ½-inch thickness
  • 2 large eggs, lightly beaten
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (25g) almond flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In one shallow dish, place the beaten eggs. In another dish, combine the Parmesan cheese, almond flour, garlic, Italian seasoning, garlic powder, salt, and pepper.
  3. Dip each chicken breast in the egg mixture, then dredge it thoroughly in the parmesan mixture, pressing gently to ensure even coating.
  4. Arrange the breaded chicken breasts on the prepared baking sheet. Drizzle the melted butter and olive oil evenly over the chicken.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (74°C).
  6. Garnish with fresh parsley (if using) and serve immediately.
