  • 1/4 teaspoon vanilla extract

  • 1 cup (113g) almond flour, finely ground
  • 1/4 cup (30g) coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) powdered erythritol
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (approx. 120ml) keto sweetened condensed milk
  • 1/2 cup (50g) chopped pecans or walnuts (optional)
  • 1 cup (100g) powdered erythritol

Instructions:

  1. Make the Keto Sweetened Condensed Milk (if homemade): Combine heavy cream, butter, erythritol, vanilla, and salt in a saucepan. Simmer over low heat, stirring constantly, until thickened and reduced (approx. 30-45 minutes). Let cool completely.
  2. Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. Combine Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  4. Cream Butter and Sweetener: In a large bowl, cream together softened butter and powdered erythritol until light and fluffy.
  5. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  6. Add Sweetened Condensed Milk: Gradually beat in the keto sweetened condensed milk until smooth.
  7. Gradually Add Dry Ingredients: Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Stir in Nuts (Optional): Fold in chopped pecans or walnuts if using.
  9. Chill Dough: Cover the dough and refrigerate for at least 30 minutes.
  10. Shape Cookies: Roll dough into 1-inch balls.
  11. Bake Cookies: Place cookies on prepared baking sheets, leaving some space between them. Bake for 12-15 minutes, or until lightly golden brown on the bottom.
  12. Cool and Coat: Let cookies cool on baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, roll each cookie in powdered erythritol until completely coated.
  13. Re-Coat (Optional): For a thicker coating, roll in powdered erythritol again after the first coat sets.
