Ingredients:

  • 1 teaspoon (5ml) active dry yeast
  • 1 teaspoon (6g) granulated sugar
  • 1 cup (240ml) warm water (105-115°F / 40-46°C)
  • 2 ½ cups (300g) all-purpose flour, plus more for dusting
  • 1 teaspoon (6g) salt
  • 2 tablespoons (30ml) olive oil, plus more for greasing
  • 1 pound (450g) pre-made pizza dough
  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) boneless, skinless chicken breasts, cut into ½-inch cubes
  • 1 teaspoon (3g) smoked paprika
  • ½ teaspoon (1.5g) garlic powder
  • ½ teaspoon (1.5g) onion powder
  • Salt and black pepper to taste
  • 1 cup (240ml) your favorite barbecue sauce
  • 2 cups (200g) shredded mozzarella cheese
  • ½ cup (50g) shredded cheddar cheese
  • ½ cup (75g) red onion, thinly sliced
  • ¼ cup (15g) fresh cilantro, chopped (for garnish)

Instructions:

  1. Make the Dough (If homemade): Proof the yeast: Combine yeast, sugar, and warm water. Let stand until foamy. Combine wet and dry: Mix flour and salt. Add yeast mixture and olive oil. Knead: Knead by hand or with a mixer until smooth and elastic. Rise: Place in a greased bowl, cover, and let rise until doubled.
  2. Prepare the Chicken: Season the chicken: Toss chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Cook the chicken: Sauté in a skillet until cooked through. Toss with BBQ Sauce: Remove from heat and toss with BBQ sauce.
  3. Assemble the Pizza: Preheat oven to 450°F (232°C). If using a pizza stone, preheat it in the oven. Shape the Dough: Roll out dough on a lightly floured surface into a 12-inch circle (or use pre-made dough). Add Cheese: Sprinkle evenly with mozzarella and cheddar cheese. Add toppings: Spread the barbecue chicken mixture evenly over the cheese. Top with red onion slices.
  4. Bake the Pizza: Transfer the pizza to the baking sheet or pizza stone. Cook: Bake until the crust is golden brown and the cheese is melted and bubbly.
  5. Garnish and Serve: Sprinkle with fresh cilantro. Slice: Cut into slices and serve immediately.
