Ingredients:
- 1 cup (240 ml) warm water
- 2 ¼ teaspoons (7g) active dry yeast
- 1 teaspoon (6g) granulated sugar
- 2 ½ cups (315g) all-purpose flour, plus more for dusting
- 1 teaspoon (6g) salt
- 2 tablespoons (30ml) olive oil, plus more for greasing
- 1 tablespoon (15ml) olive oil
- 1 pound (450g) boneless, skinless chicken breasts, cut into ½-inch cubes
- 1 teaspoon (3g) smoked paprika
- ½ teaspoon (1.5g) garlic powder
- Salt and freshly ground black pepper, to taste
- 1 cup (240ml) your favourite BBQ sauce
- 1 cup (115g) shredded mozzarella cheese
- ½ cup (50g) thinly sliced red onion
- ¼ cup (25g) chopped fresh cilantro, for garnish (optional)
Instructions:
- Combine warm water, yeast, and sugar in a bowl. Let proof until foamy.
- Add flour, salt, and olive oil. Mix until a shaggy dough forms.
- Knead the dough until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise until doubled in size.
- Heat olive oil in a large skillet.
- Add chicken, smoked paprika, garlic powder, salt, and pepper.
- Cook until chicken is cooked through and lightly browned.
- Stir in BBQ sauce and simmer to warm through.
- Preheat oven to 450°F (230°C).
- Punch down dough and divide in half.
- Roll out dough to desired thickness.
- Transfer to baking sheet or pizza stone.
- Spread BBQ sauce over the dough.
- Top with mozzarella cheese, BBQ chicken, and red onion.
- Bake until the crust is golden brown and the cheese is melted and bubbly.
- Garnish with fresh cilantro (if using).
