Ingredients:

  • 1 cup (240 ml) warm water
  • 2 ¼ teaspoons (7g) active dry yeast
  • 1 teaspoon (6g) granulated sugar
  • 2 ½ cups (315g) all-purpose flour, plus more for dusting
  • 1 teaspoon (6g) salt
  • 2 tablespoons (30ml) olive oil, plus more for greasing
  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) boneless, skinless chicken breasts, cut into ½-inch cubes
  • 1 teaspoon (3g) smoked paprika
  • ½ teaspoon (1.5g) garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 cup (240ml) your favourite BBQ sauce
  • 1 cup (115g) shredded mozzarella cheese
  • ½ cup (50g) thinly sliced red onion
  • ¼ cup (25g) chopped fresh cilantro, for garnish (optional)

Instructions:

  1. Combine warm water, yeast, and sugar in a bowl. Let proof until foamy.
  2. Add flour, salt, and olive oil. Mix until a shaggy dough forms.
  3. Knead the dough until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise until doubled in size.
  5. Heat olive oil in a large skillet.
  6. Add chicken, smoked paprika, garlic powder, salt, and pepper.
  7. Cook until chicken is cooked through and lightly browned.
  8. Stir in BBQ sauce and simmer to warm through.
  9. Preheat oven to 450°F (230°C).
  10. Punch down dough and divide in half.
  11. Roll out dough to desired thickness.
  12. Transfer to baking sheet or pizza stone.
  13. Spread BBQ sauce over the dough.
  14. Top with mozzarella cheese, BBQ chicken, and red onion.
  15. Bake until the crust is golden brown and the cheese is melted and bubbly.
  16. Garnish with fresh cilantro (if using).
