Ingredients:

  • 6 slices leftover pizza, cut into 1-inch cubes (approx. 600g / 21 oz)
  • 6 large eggs (approx. 360g / 13 oz)
  • 1 ½ cups heavy cream (360ml / 12 fl oz)
  • ½ cup milk (120 ml / 4 fl oz)
  • ½ cup grated Parmesan cheese (50g / 1.8 oz)
  • ¼ cup chopped fresh basil (optional) (5g / 0.2 oz)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil (15 ml / 0.5 fl oz)
  • 1/2 cup of additional toppings (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease the baking dish with olive oil.
  2. Cut the leftover pizza into 1-inch cubes. Spread the pizza cubes evenly in the prepared baking dish. Sprinkle over any extra toppings.
  3. In a large bowl, whisk together the eggs, heavy cream, milk, Parmesan cheese, salt, and pepper.
  4. Pour the custard mixture evenly over the pizza cubes, ensuring they are all soaked. Gently press down to submerge. Let stand for 15 minutes to allow the pizza to absorb the custard.
  5. Bake in the preheated oven for 40 minutes, or until the strata is golden brown and set. A knife inserted into the center should come out clean.
  6. Let the strata rest for 10 minutes before slicing and serving. Garnish with fresh basil (if using).
