Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- ½ cup whole milk
- Zest of 2 lemons
- 1 tablespoon lemon juice
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice (for drizzle)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the loaf pan.
- Combine flour, baking powder, and salt in a bowl. Set aside.
- Cream the softened butter and sugar in a mixing bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Incorporate the lemon zest and juice.
- Gradually mix in the dry ingredients with the milk until just combined.
- Transfer the batter into the greased loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a skewer comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a cooling rack.
- Prepare the lemon drizzle by whisking together powdered sugar and lemon juice.
- Pour the drizzle over the loaf once it has cooled slightly.
