Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ½ cup whole milk
  • Zest of 2 lemons
  • 1 tablespoon lemon juice
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice (for drizzle)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the loaf pan.
  2. Combine flour, baking powder, and salt in a bowl. Set aside.
  3. Cream the softened butter and sugar in a mixing bowl until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Incorporate the lemon zest and juice.
  6. Gradually mix in the dry ingredients with the milk until just combined.
  7. Transfer the batter into the greased loaf pan and smooth the top.
  8. Bake for 45-50 minutes, or until a skewer comes out clean.
  9. Cool in the pan for 10 minutes, then turn out onto a cooling rack.
  10. Prepare the lemon drizzle by whisking together powdered sugar and lemon juice.
  11. Pour the drizzle over the loaf once it has cooled slightly.
