Ingredients:

  • 4 cups filtered water (for brewing)
  • 4 standard green tea bags OR 2 Tablespoons loose leaf green tea (Sencha or gunpowder)
  • 5-inch piece fresh ginger root, peeled and thinly sliced or grated
  • 1/2 cup fresh lemon juice (from 2-3 medium lemons)
  • 1/4 cup honey (or maple syrup, adjustable)
  • 2 cups cold water (to dilute)
  • Lemon slices and fresh mint sprigs, for serving

Instructions:

  1. Peel and thinly slice or lightly grate the fresh ginger.
  2. Bring 4 cups (950ml) of fresh water to a boil, then immediately remove it from the heat. Wait one minute before using the water.
  3. Place the green tea bags/leaves and the prepared ginger into a heatproof vessel. Pour the hot (not boiling) water over them. Steep for exactly 3 to 4 minutes.
  4. Remove the tea bags/leaves immediately. Stir in the honey until fully dissolved in the hot liquid.
  5. Whisk in the fresh lemon juice.
  6. Pour the hot concentrate into your pitcher and add the 2 cups (475ml) of cold water to rapidly cool the mixture down.
  7. Cover the pitcher and refrigerate for at least 1 hour to allow the ginger flavour to fully infuse.
  8. Fill tall glasses generously with ice. Pour the chilled Lemon Ginger Iced Green Tea over the ice and garnish each glass with a fresh lemon slice and a sprig of mint.
