Ingredients:
- 4 cups filtered water (for brewing)
- 4 standard green tea bags OR 2 Tablespoons loose leaf green tea (Sencha or gunpowder)
- 5-inch piece fresh ginger root, peeled and thinly sliced or grated
- 1/2 cup fresh lemon juice (from 2-3 medium lemons)
- 1/4 cup honey (or maple syrup, adjustable)
- 2 cups cold water (to dilute)
- Lemon slices and fresh mint sprigs, for serving
Instructions:
- Peel and thinly slice or lightly grate the fresh ginger.
- Bring 4 cups (950ml) of fresh water to a boil, then immediately remove it from the heat. Wait one minute before using the water.
- Place the green tea bags/leaves and the prepared ginger into a heatproof vessel. Pour the hot (not boiling) water over them. Steep for exactly 3 to 4 minutes.
- Remove the tea bags/leaves immediately. Stir in the honey until fully dissolved in the hot liquid.
- Whisk in the fresh lemon juice.
- Pour the hot concentrate into your pitcher and add the 2 cups (475ml) of cold water to rapidly cool the mixture down.
- Cover the pitcher and refrigerate for at least 1 hour to allow the ginger flavour to fully infuse.
- Fill tall glasses generously with ice. Pour the chilled Lemon Ginger Iced Green Tea over the ice and garnish each glass with a fresh lemon slice and a sprig of mint.
