Ingredients:

  • 3 lbs Gold or Red Potatoes, scrubbed
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 oz cream cheese, softened
  • 2 tbsp apple cider vinegar
  • 1 tbsp ranch seasoning powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 8 oz thick-cut bacon, cooked and crumbled
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup green onions, thinly sliced

Instructions:

  1. Preheat your oven to 400°F (200°C). Toss the whole potatoes with olive oil and salt on a baking sheet.
  2. Bake for 50–60 minutes until the skin is slightly wrinkled and a knife slides easily into the center.
  3. While the potatoes cool, whisk together the sour cream, mayonnaise, softened cream cheese, apple cider vinegar, ranch seasoning, garlic powder, and pepper until the mixture is smooth.
  4. Once the potatoes are cool enough to handle, dice them into 1-inch cubes, leaving the skins on.
  5. Place the diced potatoes in a large bowl and pour the dressing over the top.
  6. Gently fold in the crumbled bacon, shredded cheddar, and green onions until every piece is evenly coated.
