Ingredients:

  • 1 cup (150g) Fresh or Frozen Strawberries, hulled and chopped
  • 1 tablespoon (15ml) Water (if using fresh strawberries)
  • 1 cup (2 sticks, 226g) Unsalted Butter, softened to room temperature
  • 3-4 cups (360-480g) Powdered Sugar, sifted
  • 2-4 tablespoons (30-60ml) Strawberry Puree, adjusted to taste and desired consistency
  • 1 teaspoon (5ml) Vanilla Extract
  • Pinch of Salt

Instructions:

  1. Combine strawberries and water (if using fresh) in a food processor or blender. Puree until completely smooth. Strain through a fine-mesh sieve to remove seeds (optional). Set aside.
  2. In a stand mixer (or using a hand mixer), beat the softened butter on medium speed until light and fluffy, about 3-5 minutes.
  3. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until incorporated after each addition. Scrape down the sides of the bowl as needed.
  4. Add 2 tablespoons of the strawberry puree, the vanilla extract, and the salt to the frosting. Beat on medium speed until well combined. Add additional strawberry puree, 1 tablespoon at a time, until the desired flavor and consistency are reached.
  5. Taste and adjust sweetness, strawberry flavor, or consistency as needed. For easier spreading, cover the bowl and chill in the refrigerator for 15 minutes. If the frosting becomes too stiff, beat it again for a few seconds before using.
