Ingredients:
- 12 large eggs
- 120ml whole milk
- 5g sea salt
- 2g freshly cracked black pepper
- 12 English muffins
- 12 pre-cooked pork sausage patties
- 12 slices sharp cheddar cheese
- 30g unsalted butter, softened
Instructions:
- Preheat oven to 350°F (180°C) and line a 9x13 inch rimmed baking sheet with parchment paper.
- Whisk eggs, milk, salt, and pepper in a large bowl until completely homogenous. Pour the mixture into the prepared baking sheet.
- Bake the eggs for 20 minutes until just set and slightly jiggly. Do not allow the eggs to brown. Remove from oven and let cool completely.
- Split and toast the English muffins under the broiler for 2-3 minutes until dark golden and shatter crisp. Spread a thin layer of softened butter on both interior sides of each muffin to create a moisture barrier.
- Slice the cooled sheet-pan eggs into 12 equal squares or use a 3-inch biscuit cutter for circles.
- Assemble the sandwiches by placing a slice of cheese directly against the bottom muffin, followed by the egg portion and the sausage patty. Top with the second muffin half.
- Ensure all components are completely cool to the touch. Wrap each sandwich tightly in parchment paper or plastic wrap, followed by a layer of aluminum foil before freezing.
