Ingredients:

  • 1 cup heavy cream
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions:

  1. In a mixing bowl, combine heavy cream, sweetened condensed milk, and vanilla extract.
  2. Whisk until the mixture is smooth and slightly thickened.
  3. Pour the cream mixture into the popsicle molds, filling them about ¾ full.
  4. Insert sticks and freeze for at least 4 hours or until completely solid.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil.
  6. Microwave in 30-second intervals, stirring until smooth.
  7. Once the popsicles are solid, remove them from the molds.
  8. Dip each popsicle into the melted chocolate to coat fully.
  9. Place coated popsicles on a parchment-lined tray and return to the freezer until the chocolate is set.
