Ingredients:
- 1 cup heavy cream
- ½ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
Instructions:
- In a mixing bowl, combine heavy cream, sweetened condensed milk, and vanilla extract.
- Whisk until the mixture is smooth and slightly thickened.
- Pour the cream mixture into the popsicle molds, filling them about ¾ full.
- Insert sticks and freeze for at least 4 hours or until completely solid.
- In a microwave-safe bowl, combine chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring until smooth.
- Once the popsicles are solid, remove them from the molds.
- Dip each popsicle into the melted chocolate to coat fully.
- Place coated popsicles on a parchment-lined tray and return to the freezer until the chocolate is set.
