Ingredients:
- 2 cups sushi rice (360g)
- 2 ½ cups water (600ml)
- 2 tablespoons rice vinegar (30ml)
- 1 tablespoon sugar (15g)
- ½ teaspoon salt (3g)
- 1 can Spam (12 oz or 340g)
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon mirin (15ml)
- 1 tablespoon vegetable oil (15ml)
- 4 sheets of nori (seaweed)
- Optional: sesame seeds for garnish
Instructions:
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a saucepan and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes. Let it steam after cooking for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Stir into the cooked rice gently, being careful not to mash it.
- Slice Spam into 8 rectangular pieces.
- Heat vegetable oil in a frying pan over medium heat.
- Sauté Spam until lightly crispy, about 3-4 minutes per side.
- In the final minute, drizzle soy sauce and mirin over Spam, allowing it to caramelize.
- Lay a sheet of nori on a cutting board (shiny side down).
- Using a musubi mold or hands, layer rice, then a slice of Spam, followed by another layer of rice.
- Wrap the nori around the rice and Spam, sealing the end with a bit of water.
- Cut each musubi in half, optionally sprinkle with sesame seeds.
- Serve warm or at room temperature.
