Ingredients:

  • 2 medium ripe but firm mangoes, peeled and diced (about 2 cups)
  • 2 ripe but firm avocados, pitted and diced
  • 1/2 small red onion, finely diced
  • 1 jalapeno pepper, seeded and finely minced
  • 1/4 cup finely chopped fresh cilantro (coriander)
  • Juice of 1 lime (about 2 tablespoons)
  • 1/4 teaspoon sea salt (or to taste)
  • Pinch of freshly ground black pepper

Instructions:

  1. Peel and dice the mangoes into small, even pieces. Place them in the mixing bowl.
  2. Halve the avocados, remove the pits, and dice the flesh into small, even pieces. Add them to the bowl with the mangoes.
  3. Finely dice the red onion. Carefully mince the jalapeno, removing the seeds for less heat. Add both to the bowl.
  4. Finely chop the fresh cilantro. Add it to the bowl.
  5. Pour the lime juice over the ingredients in the bowl. Sprinkle with salt and pepper. Gently mix everything together, being careful not to mash the avocado.
  6. Taste the Mango Avocado Salsa and adjust seasonings as needed. Add more lime juice for tanginess, salt for flavour, or jalapeno for heat.
  7. For best flavour, cover the salsa and chill it in the refrigerator for at least 15 minutes before serving.
