Ingredients:
- 2 medium ripe but firm mangoes, peeled and diced (about 2 cups)
- 2 ripe but firm avocados, pitted and diced
- 1/2 small red onion, finely diced
- 1 jalapeno pepper, seeded and finely minced
- 1/4 cup finely chopped fresh cilantro (coriander)
- Juice of 1 lime (about 2 tablespoons)
- 1/4 teaspoon sea salt (or to taste)
- Pinch of freshly ground black pepper
Instructions:
- Peel and dice the mangoes into small, even pieces. Place them in the mixing bowl.
- Halve the avocados, remove the pits, and dice the flesh into small, even pieces. Add them to the bowl with the mangoes.
- Finely dice the red onion. Carefully mince the jalapeno, removing the seeds for less heat. Add both to the bowl.
- Finely chop the fresh cilantro. Add it to the bowl.
- Pour the lime juice over the ingredients in the bowl. Sprinkle with salt and pepper. Gently mix everything together, being careful not to mash the avocado.
- Taste the Mango Avocado Salsa and adjust seasonings as needed. Add more lime juice for tanginess, salt for flavour, or jalapeno for heat.
- For best flavour, cover the salsa and chill it in the refrigerator for at least 15 minutes before serving.
