Ingredients:
- 4 medium-sized carrots (about 1 lb or 450 g)
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons apple cider vinegar (30 ml)
- 1 tablespoon liquid smoke (15 ml)
- 1 tablespoon maple syrup (15 ml)
- 1 teaspoon soy sauce or tamari (5 ml)
- 1 teaspoon salt (5 g)
- 1 teaspoon ground black pepper (5 g)
- Fresh dill for garnish
- Capers
- Vegan cream cheese
Instructions:
- Wash and peel the carrots. Slice the carrots into long, thin strips using a mandoline or knife (about 1/8-inch thick).
- In a mixing bowl, combine olive oil, apple cider vinegar, liquid smoke, maple syrup, soy sauce, salt, and black pepper. Whisk until well blended.
- Add the carrot strips to the marinade, ensuring they are fully coated. Transfer the mixture to an airtight container or jar.
- Refrigerate for at least 24 hours to allow the flavors to meld.
- When ready to serve, drain excess marinade and place the marinated carrots on a platter. Garnish with fresh dill and capers.
