Ingredients:

  • 4 medium-sized carrots (about 1 lb or 450 g)
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon liquid smoke (15 ml)
  • 1 tablespoon maple syrup (15 ml)
  • 1 teaspoon soy sauce or tamari (5 ml)
  • 1 teaspoon salt (5 g)
  • 1 teaspoon ground black pepper (5 g)
  • Fresh dill for garnish
  • Capers
  • Vegan cream cheese

Instructions:

  1. Wash and peel the carrots. Slice the carrots into long, thin strips using a mandoline or knife (about 1/8-inch thick).
  2. In a mixing bowl, combine olive oil, apple cider vinegar, liquid smoke, maple syrup, soy sauce, salt, and black pepper. Whisk until well blended.
  3. Add the carrot strips to the marinade, ensuring they are fully coated. Transfer the mixture to an airtight container or jar.
  4. Refrigerate for at least 24 hours to allow the flavors to meld.
  5. When ready to serve, drain excess marinade and place the marinated carrots on a platter. Garnish with fresh dill and capers.
