Ingredients:

  • 8 oz cream cheese, softened
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 can (113g) mild diced green chiles, undrained
  • 1/4 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the softened cream cheese in a saucepan over low medium heat. Stir constantly with a spatula until the texture is smooth and lump free.
  2. Fold in the undrained canned green chiles, garlic powder, cumin, salt, and pepper. Stir for 2-3 mins until the mixture is aromatic and pale green.
  3. Lower the heat to the lowest setting.
  4. Add the shredded Monterey Jack cheese one handful at a time. Stir continuously until fully melted and glossy.
  5. Remove the pan from the heat.
  6. Fold in the sour cream. Stir until the dip is velvety, thick, and holds a soft peak.
