Ingredients:

  • 1 cup (240ml) Whole Milk, very cold
  • 2 tablespoons (25g) Granulated Sugar
  • 1 teaspoon (5ml) Vanilla Extract (optional)
  • 1 tablespoon (15g) Unflavored Gelatin powder
  • 3 tablespoons (45ml) cold water

Instructions:

  1. Mix gelatin and cold water in a small saucepan. Let it sit for 5 minutes to soften.
  2. Gently heat the gelatin mixture over low heat, stirring constantly, until the gelatin is completely dissolved. Do not boil! Let cool slightly.
  3. In the chilled mixing bowl, combine the cold milk and sugar.
  4. Gradually pour the slightly cooled gelatin mixture into the milk mixture.
  5. Using an electric mixer (hand or stand), begin whipping on medium speed, gradually increasing to high.
  6. Continue whipping until stiff peaks form. This can take anywhere from 5-10 minutes, depending on your mixer. Watch closely!
  7. If using, gently fold in the vanilla extract with a rubber spatula.
  8. For a firmer texture, chill the whipped cream in the refrigerator for 10-15 minutes before serving.
