Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup (120ml) brewed coffee, cooled
- ½ cup (120ml) whole milk
- ½ cup (115g) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (50g) brown sugar, packed
- ½ cup (50g) chopped walnuts or pecans (optional)
- 1 teaspoon ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C) and grease the cake pan or muffin tin.
- In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine brewed coffee, milk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- For the topping, in a small bowl, combine brown sugar, nuts, and cinnamon.
- Pour half the batter into the pan, sprinkle with half of the topping mixture, then add the remaining batter on top.
- Finish with the rest of the topping mixture.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Let cool in the pan for five minutes before transferring to a wire rack.
