Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (120ml) brewed coffee, cooled
  • ½ cup (120ml) whole milk
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (50g) brown sugar, packed
  • ½ cup (50g) chopped walnuts or pecans (optional)
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the cake pan or muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine brewed coffee, milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. For the topping, in a small bowl, combine brown sugar, nuts, and cinnamon.
  6. Pour half the batter into the pan, sprinkle with half of the topping mixture, then add the remaining batter on top.
  7. Finish with the rest of the topping mixture.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Let cool in the pan for five minutes before transferring to a wire rack.
