Ingredients:
- 3 ripe bananas (approximately 450g)
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 8 oz (225g) cream cheese, softened
- 1/4 cup (56g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a bowl until smooth.
- In a mixing bowl, combine softened butter and granulated sugar; beat until light and fluffy.
- Incorporate eggs, one at a time, and vanilla extract; mix until well blended.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet mixture, alternating with the mashed bananas; stir until just combined.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Remove from oven, let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- While cooling, beat together cream cheese and butter until smooth, then gradually mix in powdered sugar and vanilla.
- Once cooled, frost the top of the cake generously and slice to serve.
