Ingredients:

  • 3 ripe bananas (approximately 450g)
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (56g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas in a bowl until smooth.
  3. In a mixing bowl, combine softened butter and granulated sugar; beat until light and fluffy.
  4. Incorporate eggs, one at a time, and vanilla extract; mix until well blended.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry mixture to the wet mixture, alternating with the mashed bananas; stir until just combined.
  7. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Remove from oven, let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. While cooling, beat together cream cheese and butter until smooth, then gradually mix in powdered sugar and vanilla.
  10. Once cooled, frost the top of the cake generously and slice to serve.
