Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1 cup natural creamy peanut butter
  • 1/2 cup maple syrup (or liquid sweetener of choice)
  • 1/2 cup vanilla or unflavored whey protein powder (about 2 standard scoops)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions:

  1. In a large mixing bowl, combine the peanut butter, maple syrup (or chosen liquid sweetener), and vanilla extract. Mix until the wet ingredients are thoroughly integrated and smooth.
  2. Add the old-fashioned rolled oats, whey protein powder, and sea salt to the wet mixture. Use a sturdy spatula or spoon to mix until all the dry ingredients are completely incorporated. The mixture should pull away from the sides of the bowl and be sticky but firm enough to roll.
  3. Use a small cookie scoop (or your hands) to roll the mixture into 24 uniform balls, approximately 1-inch in diameter.
  4. Store the peanut butter protein balls in an airtight container in the refrigerator for at least 30 minutes to allow them to set firmly. They will keep well for up to 7 days.
