Ingredients:

  • 1 cup (90g) rolled oats
  • ½ cup (60g) nut butter (peanut, almond, or sunflower seed butter)
  • ⅓ cup (80ml) honey or maple syrup
  • ¼ cup (30g) ground flaxseed or chia seeds
  • ¼ cup (30g) shredded coconut (unsweetened)
  • ¼ cup (40g) mini chocolate chips (optional)
  • Optional Add-Ins (choose 1-2, ¼ cup (40g) total): Dried cranberries, chopped nuts (walnuts, pecans, almonds), protein powder, raisins, cocoa powder

Instructions:

  1. In a large mixing bowl, combine nut butter and honey (or maple syrup). Mix well until smooth and creamy.
  2. Add rolled oats, ground flaxseed/chia seeds, shredded coconut, and any optional add-ins to the bowl.
  3. Stir all ingredients together until well combined and the mixture forms a slightly sticky dough.
  4. Cover the bowl and refrigerate the mixture for at least 30 minutes.
  5. Remove the mixture from the refrigerator and roll into 1-inch balls.
  6. Place the rolled bites on a baking sheet or plate lined with parchment or wax paper.
  7. For firmer bites, chill in the refrigerator for another 15-20 minutes (optional).
  8. Store energy bites in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months. Enjoy your Snack Prep!
