Ingredients:

  • 4 cups (500g) all-purpose flour, plus more for dusting
  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (6g) salt
  • 2 tablespoons (25g) granulated sugar (optional)
  • 1 ¾ cups (420ml) buttermilk
  • 2 tablespoons (30g) unsalted butter, melted, for brushing

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a 9-inch cast iron skillet (or baking sheet).
  2. In a large bowl, whisk together flour, baking soda, salt, and sugar (if using).
  3. Make a well in the center of the dry ingredients and pour in the buttermilk.
  4. Gently mix the wet and dry ingredients until just combined. The dough will be shaggy and sticky – do not overmix!
  5. Turn the dough out onto a lightly floured surface. Gently shape it into a round. Place the round in the prepared skillet or on the baking sheet. Use a sharp knife or dough scraper to cut a deep cross into the top of the loaf (about 1/2 inch deep). This helps the bread bake evenly.
  6. Bake for 40-45 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  7. Let the bread cool in the skillet or on the baking sheet for a few minutes before transferring it to a wire rack to cool completely. Brush with melted butter while warm (optional). Serve warm or at room temperature.
