Ingredients:
- 4 cups (500g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) baking soda
- 1 teaspoon (6g) salt
- 2 tablespoons (25g) granulated sugar (optional)
- 1 ¾ cups (420ml) buttermilk
- 2 tablespoons (30g) unsalted butter, melted, for brushing
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a 9-inch cast iron skillet (or baking sheet).
- In a large bowl, whisk together flour, baking soda, salt, and sugar (if using).
- Make a well in the center of the dry ingredients and pour in the buttermilk.
- Gently mix the wet and dry ingredients until just combined. The dough will be shaggy and sticky – do not overmix!
- Turn the dough out onto a lightly floured surface. Gently shape it into a round. Place the round in the prepared skillet or on the baking sheet. Use a sharp knife or dough scraper to cut a deep cross into the top of the loaf (about 1/2 inch deep). This helps the bread bake evenly.
- Bake for 40-45 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Let the bread cool in the skillet or on the baking sheet for a few minutes before transferring it to a wire rack to cool completely. Brush with melted butter while warm (optional). Serve warm or at room temperature.
