Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (120ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (about 3 medium) mashed ripe bananas (approximately 240g)
Instructions:
- Preheat oven to 375°F (190°C/Gas Mark 5). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In the same bowl, add oil, eggs, vanilla extract, and mashed bananas.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix – a few lumps are perfectly fine.
- Fill each muffin cup about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
