Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent (about 3-4 minutes).
  3. Stir in minced garlic and cook until fragrant (about 30 seconds).
  4. Add ground beef or sausage to the pot and brown the meat, breaking it into pieces until fully cooked (about 5-7 minutes).
  5. Stir in crushed tomatoes, broth, oregano, basil, salt, and pepper, and bring the mixture to a gentle boil.
  6. Stir in broken lasagna noodles and reduce heat, letting it simmer until noodles are tender (about 10-15 minutes).
  7. In a bowl, combine ricotta, mozzarella, and Parmesan.
  8. Ladle the soup into bowls and top with the cheesy mixture. Optionally broil for 2-3 minutes for a melty finish, and garnish with fresh basil.
