- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces uncooked lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent (about 3-4 minutes).
- Stir in minced garlic and cook until fragrant (about 30 seconds).
- Add ground beef or sausage to the pot and brown the meat, breaking it into pieces until fully cooked (about 5-7 minutes).
- Stir in crushed tomatoes, broth, oregano, basil, salt, and pepper, and bring the mixture to a gentle boil.
- Stir in broken lasagna noodles and reduce heat, letting it simmer until noodles are tender (about 10-15 minutes).
- In a bowl, combine ricotta, mozzarella, and Parmesan.
- Ladle the soup into bowls and top with the cheesy mixture. Optionally broil for 2-3 minutes for a melty finish, and garnish with fresh basil.
