Ingredients:
- 1 large egg (approx. 50g)
- 2 tablespoons (15g) cornstarch
- 1 tablespoon (15ml) milk (dairy or non-dairy)
- 1/4 teaspoon vanilla extract (optional)
- Pinch of salt
- Butter or oil for greasing the pan
Instructions:
- In a small bowl, whisk together the egg, cornstarch, milk, vanilla extract (if using), and salt until smooth and lump-free.
- Heat a non-stick skillet over medium-low heat.
- Add a small amount of butter or oil to the pan and swirl to coat evenly.
- Pour the batter into the hot pan to form one or two small pancakes.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Gently flip with a spatula.
- Serve the pancakes immediately with your favorite toppings.
