Ingredients:

  • 1 large egg (approx. 50g)
  • 2 tablespoons (15g) cornstarch
  • 1 tablespoon (15ml) milk (dairy or non-dairy)
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Butter or oil for greasing the pan

Instructions:

  1. In a small bowl, whisk together the egg, cornstarch, milk, vanilla extract (if using), and salt until smooth and lump-free.
  2. Heat a non-stick skillet over medium-low heat.
  3. Add a small amount of butter or oil to the pan and swirl to coat evenly.
  4. Pour the batter into the hot pan to form one or two small pancakes.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. Gently flip with a spatula.
  6. Serve the pancakes immediately with your favorite toppings.
