Ingredients:

  • 1 ripe banana, mashed (approximately 120g / 4.2 oz)
  • 1 cup unsweetened almond milk (240ml / 8 fl oz)
  • ¼ cup almond flour (30g / 1 oz)
  • 2 tablespoons unsweetened shredded coconut (15g / 0.5 oz)
  • 1 tablespoon chia seeds (7g / 0.25 oz)
  • 1 tablespoon maple syrup (15ml / 0.5 fl oz), or honey
  • ¼ teaspoon cinnamon
  • Pinch of sea salt

Instructions:

  1. In a saucepan, combine mashed banana, almond milk, almond flour, shredded coconut, chia seeds, maple syrup (or honey), cinnamon, and salt.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring constantly to prevent sticking and clumping.
  3. Reduce heat to low and continue to simmer for 5-7 minutes, or until the porridge has thickened to your desired consistency. Stir frequently.
  4. Pour the oatmeal into a bowl.
  5. Top with your favorite toppings such as sliced banana, chopped nuts, or coconut flakes. Serve immediately.
