Ingredients:

  • 4 fillets of white fish (e.g., cod or tilapia, approx. 6 oz / 170 g each)
  • ½ cup (60 g) all-purpose flour
  • 1 teaspoon (5 g) paprika
  • ½ teaspoon (2.5 g) salt
  • ½ teaspoon (2.5 g) black pepper
  • 2 tablespoons (30 ml) vegetable oil
  • 4 tablespoons (½ stick or 56 g) unsalted butter
  • Zest of 1 lemon (about 1 teaspoon / 5 g)
  • 2 tablespoons (30 ml) fresh lemon juice (about 1 lemon)
  • 1 tablespoon (15 g) fresh parsley, chopped (optional for garnish)

Instructions:

  1. Pat the fish fillets dry with paper towels.
  2. In a shallow bowl, combine flour, paprika, salt, and pepper.
  3. Dredge each fish fillet in the flour mixture, shaking off excess.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Carefully place the fish fillets in the skillet, ensuring not to overcrowd.
  6. Cook for about 3-4 minutes on each side or until the fish is golden brown and flakes easily with a fork.
  7. In a small saucepan, melt the butter over medium heat.
  8. Add lemon zest and lemon juice; stir to combine and cook for 1-2 minutes until fragrant.
  9. Place the cooked fish on plates; drizzle with lemon butter sauce.
  10. Garnish with chopped parsley if desired.
