Ingredients:
- 2 (6-ounce/170g) salmon fillets, skin on or off
- 1 tablespoon (15ml) olive oil
- 1/4 teaspoon (1.5g) salt
- 1/4 teaspoon (1.5g) black pepper
- 4 tablespoons (57g) unsalted butter
- 3 cloves garlic, minced
- 1/4 cup (60ml) dry white wine (optional)
- 1/4 cup (60ml) chicken broth (low sodium)
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15ml) chopped fresh parsley
- 1/4 teaspoon (1.5g) red pepper flakes (optional)
Instructions:
- Pat salmon fillets dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Place salmon fillets skin-side down (if using skin-on) in the hot skillet and sear until golden brown and crispy. Reduce heat to medium and cook until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the pan and set aside. Add butter to the same skillet and melt over medium heat. Add minced garlic and sauté until fragrant but not browned.
- Pour in white wine (if using) and let it bubble for a minute, scraping up any browned bits from the bottom of the pan.
- Add chicken broth and lemon juice to the skillet. Bring to a simmer and cook until the sauce has slightly reduced and thickened.
- Stir in fresh parsley and red pepper flakes (if using). Season with salt and pepper to taste.
