Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon (15ml) olive oil
  • 1/4 teaspoon (1.5g) salt
  • 1/4 teaspoon (1.5g) black pepper
  • 4 tablespoons (57g) unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) dry white wine (optional)
  • 1/4 cup (60ml) chicken broth (low sodium)
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15ml) chopped fresh parsley
  • 1/4 teaspoon (1.5g) red pepper flakes (optional)

Instructions:

  1. Pat salmon fillets dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Place salmon fillets skin-side down (if using skin-on) in the hot skillet and sear until golden brown and crispy. Reduce heat to medium and cook until the salmon is cooked through and flakes easily with a fork.
  3. Remove the salmon from the pan and set aside. Add butter to the same skillet and melt over medium heat. Add minced garlic and sauté until fragrant but not browned.
  4. Pour in white wine (if using) and let it bubble for a minute, scraping up any browned bits from the bottom of the pan.
  5. Add chicken broth and lemon juice to the skillet. Bring to a simmer and cook until the sauce has slightly reduced and thickened.
  6. Stir in fresh parsley and red pepper flakes (if using). Season with salt and pepper to taste.
