Ingredients:

  • 4 large ripe peaches, pitted and sliced (approximately 500 g)
  • 1/4 cup (50 g) unsalted butter
  • 1/2 cup (100 g) brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (120 ml) unsweetened applesauce
  • 1/4 cup (60 ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) milk or almond milk

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Melt butter in the cake pan, sprinkle brown sugar evenly over it, and arrange peach slices on top.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, combine sugar, applesauce, oil, eggs, and vanilla until smooth.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  6. Pour cake batter over the peach layer in the pan.
  7. Bake for 35-40 minutes or until a toothpick comes out clean.
  8. Let the cake cool for 10 minutes, then carefully invert onto a serving plate.
