Ingredients:
- 4 large ripe peaches, pitted and sliced (approximately 500 g)
- 1/4 cup (50 g) unsalted butter
- 1/2 cup (100 g) brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (120 ml) unsweetened applesauce
- 1/4 cup (60 ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120 ml) milk or almond milk
Instructions:
- Preheat the oven to 350°F (175°C).
- Melt butter in the cake pan, sprinkle brown sugar evenly over it, and arrange peach slices on top.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, combine sugar, applesauce, oil, eggs, and vanilla until smooth.
- Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
- Pour cake batter over the peach layer in the pan.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let the cake cool for 10 minutes, then carefully invert onto a serving plate.
