Ingredients:

  • 3 cups (270g) rolled oats (old-fashioned oats, not instant)
  • 1/2 cup (50g) chopped walnuts or pecans (optional)
  • 1 teaspoon (5ml) baking powder
  • 1/2 teaspoon (2.5ml) ground cinnamon
  • 1/4 teaspoon (1.25ml) salt
  • 2 ripe bananas, mashed (about 1 cup/240ml)
  • 2 cups (480ml) milk (dairy or non-dairy)
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/4 cup (60ml) pure maple syrup (or honey)
  • 1/4 cup (60ml) creamy peanut butter
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (60ml) peanut butter chips (optional)
  • 1 sliced banana (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, whisk together rolled oats, nuts (if using), baking powder, cinnamon, and salt.
  3. In a separate bowl, mash the bananas. Add milk, applesauce, maple syrup, peanut butter, egg, and vanilla extract. Whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix!
  5. Pour the mixture into the prepared baking dish.
  6. Sprinkle with peanut butter chips and sliced banana, if desired.
  7. Bake for 35-40 minutes, or until golden brown and a knife inserted into the center comes out clean.
  8. Let cool for a few minutes before serving the peanut butter banana baked oatmeal.
