Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) packed light brown sugar
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon (2.5ml) baking soda
  • 1/4 teaspoon (1.25ml) salt
  • 1 cup (250g) creamy peanut butter (Not natural)
  • 4 ounces (113g) semi-sweet or dark chocolate, chopped (Good quality)
  • 1 tablespoon (15ml) vegetable oil or coconut oil

Instructions:

  1. Line an 8x8 inch baking pan with parchment paper or aluminum foil, leaving an overhang for easy removal.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the vanilla extract and peanut butter until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Press the peanut butter mixture evenly into the prepared baking pan.
  6. Cover the pan and refrigerate for at least 30 minutes to firm up the base. This prevents over-spreading.
  7. Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until the edges are lightly golden brown and the center is set.
  8. Let the bars cool completely in the pan on a wire rack.
  9. In a small saucepan over low heat or in a microwave-safe bowl in 30-second intervals, melt the chocolate and oil together, stirring until smooth.
  10. Drizzle the melted chocolate evenly over the cooled peanut butter bars. Let the chocolate set completely before cutting into squares. Refrigerating speeds up the setting process.
  11. Use the parchment paper overhang to lift the bars out of the pan. Cut into 16 squares and serve. These are delicious peanut butter bars with chocolate.
