Ingredients:
- 1 cup (227g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) packed light brown sugar
- 1 teaspoon (5ml) vanilla extract
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon (2.5ml) baking soda
- 1/4 teaspoon (1.25ml) salt
- 1 cup (250g) creamy peanut butter (Not natural)
- 4 ounces (113g) semi-sweet or dark chocolate, chopped (Good quality)
- 1 tablespoon (15ml) vegetable oil or coconut oil
Instructions:
- Line an 8x8 inch baking pan with parchment paper or aluminum foil, leaving an overhang for easy removal.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the vanilla extract and peanut butter until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press the peanut butter mixture evenly into the prepared baking pan.
- Cover the pan and refrigerate for at least 30 minutes to firm up the base. This prevents over-spreading.
- Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until the edges are lightly golden brown and the center is set.
- Let the bars cool completely in the pan on a wire rack.
- In a small saucepan over low heat or in a microwave-safe bowl in 30-second intervals, melt the chocolate and oil together, stirring until smooth.
- Drizzle the melted chocolate evenly over the cooled peanut butter bars. Let the chocolate set completely before cutting into squares. Refrigerating speeds up the setting process.
- Use the parchment paper overhang to lift the bars out of the pan. Cut into 16 squares and serve. These are delicious peanut butter bars with chocolate.
