Ingredients:

  • 2 cups packed light brown sugar
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)
  • Butter or cooking spray as needed

Instructions:

  1. Grease the baking pan or line it with parchment paper.
  2. In a heavy-bottomed saucepan, combine brown sugar, milk, and butter.
  3. Place over medium heat and stir until the mixture is well combined and the sugar has dissolved.
  4. Increase heat to medium-high and cook, stirring occasionally, until it reaches a boil.
  5. Insert a candy thermometer and continue boiling until the mixture reaches 234°F (112°C) (soft-ball stage).
  6. Once the desired temperature is reached, remove from heat.
  7. Stir in the vanilla extract and nuts (if using).
  8. Allow to cool slightly, then beat the mixture with a wooden spoon until it thickens and becomes creamy.
  9. Pour the mixture into the prepared baking pan, spreading it evenly.
  10. Let it cool at room temperature until set, then cut into squares.
