Ingredients:
- 2 cups packed light brown sugar
- 1 cup whole milk
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 cup chopped pecans or walnuts (optional)
- Butter or cooking spray as needed
Instructions:
- Grease the baking pan or line it with parchment paper.
- In a heavy-bottomed saucepan, combine brown sugar, milk, and butter.
- Place over medium heat and stir until the mixture is well combined and the sugar has dissolved.
- Increase heat to medium-high and cook, stirring occasionally, until it reaches a boil.
- Insert a candy thermometer and continue boiling until the mixture reaches 234°F (112°C) (soft-ball stage).
- Once the desired temperature is reached, remove from heat.
- Stir in the vanilla extract and nuts (if using).
- Allow to cool slightly, then beat the mixture with a wooden spoon until it thickens and becomes creamy.
- Pour the mixture into the prepared baking pan, spreading it evenly.
- Let it cool at room temperature until set, then cut into squares.
