Ingredients:
- 8 oz (225g) full-fat cream cheese, softened
- 2 tbsp (28g) unsalted butter, softened
- 1 cup (120g) powdered sugar, sifted
- 7 oz (198g) marshmallow crème
- 1/2 tsp peppermint extract
- 1/2 tsp vanilla extract
- 1/3 cup (50g) crushed candy canes or peppermint starlight mints
- 2 drops red food coloring (optional)
Instructions:
- In a large mixing bowl, beat the softened cream cheese and butter on medium-high speed for approximately 2 minutes until smooth and glossy.
- Lower the mixer speed and gradually add the powdered sugar, vanilla, and peppermint extract. Increase speed to high for 1 minute to whip.
- Using a silicone spatula, gently fold in the marshmallow crème and the optional food coloring until the mixture is uniform and light.
- Fold in 3/4 of the crushed peppermint pieces. Transfer to a serving bowl and garnish with the remaining peppermint crumbles immediately before serving.
