Ingredients:

  • 4 Jimmy Dean sausage patties (454 g)
  • 4 large eggs (approx. 240 g)
  • 4 slices American cheese (approx. 112 g)
  • 4 English muffins (approx. 280 g, split in half)
  • Salt and black pepper to taste

Instructions:

  1. Heat the skillet over medium heat. Cook sausage patties for 4-5 minutes on each side until golden brown and cooked through (internal temp of 160°F/70°C). Set aside and keep warm.
  2. In a bowl, whisk together eggs, salt, and pepper. In the same skillet, reduce heat to medium-low. Scramble the eggs until creamy and softly set, about 3-4 minutes.
  3. Place half of an English muffin on a plate. Top with a sausage patty, a slice of cheese, and a generous scoop of scrambled eggs. Top with the other half of the muffin.
  4. Toast the muffins in a toaster or under the broiler for 1-2 minutes until golden, if desired.
