Ingredients:

  • 2 cups (240g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup (240ml) milk (whole or low-fat)
  • ½ cup (120ml) unsalted butter, melted and slightly cooled
  • 1 cup (150g) fresh or frozen berries (optional)
  • ½ cup (75g) chocolate chips (optional)
  • ½ cup (70g) nuts (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line the muffin tin with paper liners or grease with butter.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well mixed.
  3. In another bowl, whisk the egg, then add milk and melted butter. Whisk until combined.
  4. Pour the wet ingredients into the dry ingredients. Gently mix with a rubber spatula until just combined; be careful not to overmix.
  5. Fold in your choice of optional add-ins (berries, chocolate chips, or nuts).
  6. Using an ice cream scoop, fill each muffin cup about ¾ full.
  7. Bake for 18-20 minutes or until the tops are golden and a toothpick inserted comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
