Ingredients:
- 2 cups (240g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 large egg
- 1 cup (240ml) milk (whole or low-fat)
- ½ cup (120ml) unsalted butter, melted and slightly cooled
- 1 cup (150g) fresh or frozen berries (optional)
- ½ cup (75g) chocolate chips (optional)
- ½ cup (70g) nuts (optional)
Instructions:
- Preheat your oven to 375°F (190°C) and line the muffin tin with paper liners or grease with butter.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well mixed.
- In another bowl, whisk the egg, then add milk and melted butter. Whisk until combined.
- Pour the wet ingredients into the dry ingredients. Gently mix with a rubber spatula until just combined; be careful not to overmix.
- Fold in your choice of optional add-ins (berries, chocolate chips, or nuts).
- Using an ice cream scoop, fill each muffin cup about ¾ full.
- Bake for 18-20 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
